Edamame Hummus

(Yields 2 cups)

1 (16 oz) bag frozen shelled edamame (3 cups)
1 Tbsp. tahini paste
3 Tbsp. freshly squeezed lemon juice
2 garlic cloves
¼ tsp. cayenne pepper
¼ tsp. kosher salt
¾ cup canola oil

Bring 6 cups of water to a rolling boil. Drop the frozen edamame in and cook 10 minutes until beans are tender. Drain and rinse beans with cold water until cool.

Place edamame beans in bowl of food processor with the tahini and next four ingredients. Blend for 10-15 seconds until minced. Slowly pour the oil into feeding tube and blend until pureed and fully incorporated. Serve with low-sodium pita chips and crudite vegetables.

Nutrition facts (per 2 Tbsp): 140 calories, 12g total fat, (1 g sat. fat), 40 mg sodium, 4g carbohydrates, 2g fiber, 3g protein.
