Chicken Romano Meatloaf

Total Time: 1 hour 15 minutes
Makes 8 Main Dish Servings


1/2 C freshly grated Romano Cheese
1/2 C plain dried bread crumbs
1 large egg
1C marinara sauce
2 lbs. ground chicken

1. Preheat oven to 400° F. Line 13” by 9” metal baking pan with foil. Spray foil with nonstick cooking spray.
2. In a large bowl, combine Romano, bread crumbs, egg, 1/2 cup marinara sauce, and 1/2 tsp salt. Add ground chicken and mix just until combined.
3. Spoon chicken mixture into center of prepared pan; shape into 9” x 5” loaf, pressing firmly. Spread remaining 1/2 c marinara over top.
Bake meatloaf 1 hour 5 minutes, or until temperature on instant-read thermometer inserted in center of meatloaf reaches 165° F (temperature will rise to 170° F upon standing). Let stand 10 minutes fore easier slicing.

Each serving: about 240 calories, 23g protein, 8g carbohydrate, 12g total fat (1g saturated). 1g fiber, 32mg cholesterol, 455 mg sodium.
