Another Reason To Avoid White Carbs

I’m sure you’ve heard before that you should look to avoid processed and refined carbs if you want to lose weight. This is nothing new.

However, I discovered another little dirty secret that food manufacturers don’t want you to know. It involves the process that is commonly used to bleach flour, even if later made brown again, which is a common trick.

White flour is made white through a bleaching process that uses chemicals. One such chemical, chlorine dioxide, has an interesting side effect. Chlorine dioxide combines with residual protein found in most of these foods to form a substance called “alloxan.”

What’s so special about allloxan you ask?

Well you’ll find it interesting that researchers use alloxan in lab rats to induce diabetes. That’s right it’s used to actually produce diabetes! I’m not kidding you as I couldn’t make this stuff up. Unbelievable.

Scientists have known of the alloxan-diabetes connection for years. In the research sense, giving alloxan to lab rats is similar to injecting the animal with a deadly virus. It works by initiating free radical damage to the DNA in beta cells of the pancreas causing the cells to malfunction and die. When these beta cells malfunction and die, the pancreas will no longer produce insulin as it should.

So why in the world would the FDA allow food manufacturers to use chlorine dioxide which research clearly shows can produce alloxan? That’s a good question and I don’t have the answer.

When I did my research it appears there’s not a direct correlation between alloxan and diabetes. From what I’ve found there’s factors involving genetic predisposition to injury coupled with some defect in tissue regeneration capacity.

In other words, not everyone is affected the same way. Kind of like the correlation between eating high cholesterol foods and getting heart disease. Everyone is simply different.

Having said that, if genetics are not on your side eating processed and refined carbs can increase your risk of developing diabetes. It’s not just about the sugar folks. Another reason why everyone will benefit from following a Primal Blueprint or Paleo type diet consisting of lean proteins, vegetables, nuts, seeds, omega-3 fats and oils, along with moderate fruits and the occasional tuber.

No chlorine dioxide, alloxan, or other “who knows what” in a diet consisting of natural foods. The jury may still be out on whether or not certain chemicals are harmful to our health but take a look around us.

We don’t seem to be doing so well with all the advancement that’s been made with our foods. We didn’t get to almost 60% obesity rates in this country without eating the wrong foods.

I personally believe that God has given us all we need for optimal health with the foods provided to us without man messing with them. The further we stray from food being in its natural state the worse off we get.

The human body has a remarkable ability to deal with a lot of stuff, but it can only take so much. There’s no question we are what we eat. I don’t think we have to be perfect all the time but processed and refined foods (regardless of calories) appear to serve no benefit in our diets.

The balance between the good stuff and the bad stuff will always ultimately determine our health and waistlines.
